Looking back, the useful moment came when the host corrected one small technique at West Lake in Hangzhou. That is the part I tried again after getting home.
The unglamorous part: dietary questions in Hangzhou were handled before we started, not halfway through the first tasting. That made the session much easier to enjoy.
Before you go, come hungry in Hangzhou and say clearly what you cannot eat. There was enough variety that skipping one item did not make the experience feel smaller. I would rather keep the pause at the cooking session than add another stop.
Not every minute was engineered into a “moment.” There was time for coffee, questions and simply watching Hangzhou go by.
Honestly, no grand claims from me: this was organised well, felt personal and showed us Hangzhou at a sensible pace.
