What I remember is the change from one stop to the next: different room, different smell, different crowd. The food stops was only one part of it. I would keep the Chengdu outline as it was.
What helped was simple: dietary questions in Chengdu were handled before we started, not halfway through the first tasting. That made the session much easier to enjoy. The time around the food stops was not the part I would cut.
Small tip: do not eat a large breakfast before the Chengdu tour. The portions at individual stops look modest, then suddenly you realise you have been tasting things for hours. I would rather keep the pause at the food stops than add another stop.
Looking back, this wasn't a “see everything” tour, and that was a strength. The time around Chengdu felt specific to Chengdu, not interchangeable with another city. My only advice is not to shorten the time at the food stops.
In short, a full 4 hours, in the good sense. Wear comfortable shoes and leave the evening loose.
