Looking back, I booked for the food in Chengdu, but the ordinary conversation around the work table was what made the session feel personal.
The unglamorous part: dietary questions in Chengdu were handled before we started, not halfway through the first tasting. That made the session much easier to enjoy. With 4 hours to work with, the balance felt sensible.
Before you go, come hungry in Chengdu and say clearly what you cannot eat. There was enough variety that skipping one item did not make the experience feel smaller. I would still leave extra time for the dumpling-making.
Not every minute was engineered into a “moment.” There was time for coffee, questions and simply watching Chengdu go by. The time around the dumpling-making was not the part I would cut.
I would change my shoes, not the itinerary. My only advice is not to shorten the time at the dumpling-making.
