Looking back, I booked with two dishes in mind and left with a longer list. Dashipu Waterfall & Tea Garden Rocks Day gave the route a clear sense of place rather than feeling like random snacks.
The unglamorous part: the Shanghai stops were organised, but the food did not arrive like a rehearsed tasting menu. Each place kept its own character. My only advice is not to shorten the time at Dashipu Waterfall & Tea Garden Rocks Day.
Before you go, come hungry in Shanghai and say clearly what you cannot eat. There was enough variety that skipping one item did not make the experience feel smaller. With 1 hour to work with, the balance felt sensible.
