Looking back, I expected the Lhasa and Lijiang cooking session to be mostly watching. We actually had time to handle the ingredients, ask basic questions and make mistakes without feeling rushed.
The unglamorous part: the Lhasa and Lijiang stops were organised, but the food did not arrive like a rehearsed tasting menu. Each place kept its own character.
Before you go, come hungry in Lhasa and Lijiang and say clearly what you cannot eat. There was enough variety that skipping one item did not make the experience feel smaller.
I liked this more a day later, when I looked back through my photos and realised how different the cooking session and the hotpot meal had felt.
