Looking back, what I remember is the change from one stop to the next: different room, different smell, different crowd. The food stops was only one part of it.
The unglamorous part: the Xi'an meeting point was simple to find, and the food stops came at a sensible pace. There was time to ask what we were eating rather than just moving to the next plate.
Before you go, come hungry in Xi'an and say clearly what you cannot eat. There was enough variety that skipping one item did not make the experience feel smaller. I would rather keep the pause at the food stops than add another stop.
We booked because arranging Xi'an ourselves looked fiddly. We came away remembering the conversations as much as the places. I would still leave extra time for the food stops.
Honestly, no grand claims from me: this was organised well, felt personal and showed us Xi'an at a sensible pace.
