The food came quickly, but the tour did not. We had time to ask where each dish came from and how people in Xiamen and Guangzhou usually order it.
What helped was simple: the Xiamen and Guangzhou stops were organised, but the food did not arrive like a rehearsed tasting menu. Each place kept its own character.
Small tip: do not eat a large breakfast before the Xiamen and Guangzhou tour. The portions at individual stops look modest, then suddenly you realise you have been tasting things for hours.
Looking back, I had a long list of things I thought I needed to see. After Xiamen and Guangzhou, I was happier slowing down and noticing fewer things properly.
