Meet your guide at the selected Xi'an pickup point, then use the tuktuk to move between the smaller lanes and family-run food stops around the Muslim Quarter. The route is designed to reach four or five places that would be awkward to connect on foot in one evening, while the guide explains what each dish is and how it fits into the city's Hui Muslim food culture.
Across the tour, sample eight items such as hand-pulled noodles, lamb skewers, rou jia mo and persimmon cakes. Local beer and soft drinks are available during the ride, and the evening finishes at a craft brewery with a final beer. This is a tasting-led dinner experience rather than a single seated meal, so arrive hungry and tell the guide about dietary restrictions before the first stop.

Looking back, this was less about eating a huge meal than paying attention to several small ones. That rhythm worked for 3 hours and 30 minutes.
The unglamorous part: the Xi'an stops were organised, but the food did not arrive like a rehearsed tasting menu. Each place kept its own character.
Before you go, come hungry in Xi'an and say clearly what you cannot eat. There was enough variety that skipping one item did not make the experience feel smaller.
Not every minute was engineered into a “moment.” There was time for coffee, questions and simply watching Xi'an go by.
In short, I would change my shoes, not the itinerary. I would keep the Xi'an outline as it was.
