My camera roll says the Longji rice terraces was the big moment. My actual favourite was Guilin; it felt less obvious and more personal.
What helped was simple: our questions wandered well beyond the standard facts, and the guide stayed with them. That made the time at Guilin much more interesting. The time around the Longji rice terraces was not the part I would cut.
Looking back, I would check the weather and dress in layers. We moved between the vehicle, open spaces and indoor sites often enough to notice the difference. With 8 hours to work with, the balance felt sensible.
Looking back, this felt like travelling with someone who knew the area, not following a person holding a flag. That difference showed most at Guilin.
Honestly, a full 8 hours, in the good sense. Wear comfortable shoes and leave the evening loose.
