Looking back, the food came quickly, but the tour did not. We had time to ask where each dish came from and how people in Hong Kong usually order it.
The unglamorous part: the useful part in Hong Kong was having someone explain how to order the same dishes later. I left with names in my phone, not just photos. For 3 hours around Hong Kong, the pace felt about right.
Before you go, come hungry in Hong Kong and say clearly what you cannot eat. There was enough variety that skipping one item did not make the experience feel smaller. My only advice is not to shorten the time at the food stops.
The best compliment I can give is that I never checked how many stops were left. The dim sum stops arrived at just the right point in the route.
