The dish we made in Suzhou was not restaurant-perfect, which made me like it more. We had made it ourselves and understood what went into it.
What helped was simple: our questions wandered well beyond the standard facts, and the guide stayed with them. That made the time at Suzhou much more interesting. The time around the cooking session was not the part I would cut.
Looking back, the schedule is fairly full. I would have liked another twenty minutes at the cooking session, but I would not drop any of the main stops. For this itinerary, the number of stops was enough.
Looking back, this felt like travelling with someone who knew the area, not following a person holding a flag. That difference showed most at Suzhou.
Worth doing for the cooking session; worth remembering for the small stops in between.
